been chronically addicted to youtube since a teen, and this is the tipping point for me. Are there any alternatives you'd suggest or should I stick to Khan Academy and learn math and physics because I need to do better things with my life other than watching garbage content anyway. That's probably the only good thing this is doing for me.

A good way to quit an addiction is to replace it with something not retarded. Take up exercising, for example.

People used to have the radio or TV on in the background for the whole day, I don't think that was considered an addiction and I don't see how this is much different either.

In my experience it's very hard to fully quit it
I presume that your problem is the recommendation algorithm, not content on youtube per se. In that regard I'd suggest you subscribe to a few channels you really like, and disable recommendations via privacy settings / unhook extension.

Relapse is highly likely if you completely cut it off. It's better to start by limiting your portion size, and get used to re-watching videos you deemed meaningful. In time you will feel less and less tempted to open the app, and hopefully you develop some other hobby to fill up that time / craving of information.

A better option may be to subscribe to the RSS feeds of a few channels, then only interact with them via third-party frontends (Invidious allows you to disable showing video suggestions)

This is what I did a while back, there's a few channels I actually actively want to see what they release, so I added them to an RSS feed. I just use Thunderbird for RSS.

This is sound advice.
One of the worst things about the Internet today is that it's run by corporations who have a practical monopoly on certain types of platforms. They design those platforms to be as addictive as possible and there's really no sound alternatives if you don't like their content algorithms or monetization methods. It's all designed in such a way so as to maximize FOMO, which ultimately draws you back if you quit it cold turkey.
The need for openly-available tools that would allow for the creation and maintenance of an Independent Web has never been greater. We wouldn't feel the need for the Big sites if there were a solid ecosystem of smaller sites that were worth visiting, much as we had in the Before Times, before the Internet went mainstream.

I'm in my 40s and am lucky enough not to be trained to rely on it for entertainment, thankfully. My social media presence is really limited, split between here and Reddit (yeah, I know, go back, but I prefer it here really).
I have a few channels I'll check in on on YouTube but so much of it is junk. Worse, I hate how it and similar platforms have encouraged video tutorials for things instead of good ol' written articles.

It was a bad habit back than and it is a bad habit today. The difference is, that there is a bigger awareness about overstimulation and our dopamine system today.

Not every brain works the same way. It is good that it is easy for you. But dopamine is real and the effects of dopamine and its role in addictive behaviors in many individuals is well studied.
Many forms of media have figured out how to capitalize on this to their own advantage. Look at the news media. Now, without knowing which side of the political aisle you're on, have you ever looked at "the other side" and wondered why exactly it behaves the way it does? It's simple. The media outlets put out content which creates dopamine spikes in its target audience and media on both sides does it. It's why people are inclined to get FOMO regarding the stories on their side of the aisle while wondering what the fuss is when it comes to the other -- when people are worked up about something you don't see the big deal about, it's because they're locked into the dopamine rush of that narrative and you're not. Best example is Trump, where anti-Trump people are locked into every negative story that comes out about him while pro-Trump people are locked into the narratives he pushes.
And it extends beyond politics, into social media itself. Make no mistake, a lot of our current social problems are stirred up by influential organizations who have learned to use our biology against us, and turning a blind eye to that makes us more susceptible to their machinations, not less.
It's good if you've learned to regulate your responses. That's how it should be. But most people do not and don't even know that such a thing is possible.

Delete your entire YT watch history, then disable it. Your fee will be completely empty and free of any distraction (YT Shorts will also cease to function, which is a giant plus).

The algorithm now has no clue what to serve you: You're now free, congrats.

All the dopamine stuff that the media uses and so on is pseudoscience my man, every single extraordinary claim on which mountains of practices are built turned out to be impossible to reproduce and not valid phenomena. Explanations lay in culture, preferences and so on.

Exactly the fact that people have different brain architectures and even there's the so called inherited addiction from family proves that it's all mental since 9 out of 10 people quit problematic alcohol abuse on their own without any therapy, think about what a large percentage of those are "genetically predisposed".

The fact that hypnosis, allen carr method, religious conversions (metanoia), the freedom model have such high ridiculous success rates even after using just their books or attending one course with those vs. expensive and top of the art addiction model therapy proves it all, it's just a mental game and people need to be told the obvious truth, free will is real and they can change your preferences.

Don't get me wrong, I absolutely believe in free will.
But I also think we have to make a conscientious effort to exercise it. Barring that, I think people are inclined to fall back on habit and deterministic processes.
That's all being an "NPC" is, after all. Living a life that doesn't bother to strive towards something more. And none of this is to disagree with you in the slightest. You absolutely *can* choose to be more, to break free from what your mind tells you that you ought to be.
I just think people can be more but many choose not to be. Hence the prevalence of social manipulations which count on people not choosing to be something more. Because, at the end of the day, exercising free will takes effort and many choose not to put in that effort.

You have to use it intelligently but the reality is that libertarian free will entails that even after having white knuckled something many times and you feel "depleted" you can still continue no matter what.

Anyway the point is to use your free will intelligently, you can initiate re-evaluation of the reasons you're binging youtube at any point in your life and devalue, demystify all of them, then it won't be different from opening the fridge door then closing it and never thinking about it for the rest of the day, no willpower in that raw sense required.

We gotta be smart about these things.

Neo in Matrix and the cop in Robocop 2014 show libertarian free will at work so to speak in fiction.
