I have a document that i need someone to copy exactly but just change the date to this year. It can’t look like the same exact document but it needs to look like they rescanned it in(aka same logo same font but not just changing the 4 to a 5) I’ll compensate you $100. Thanks guys

Is it a pdf? You could edit that yourself.

it was a paper scan in that i’m looking to replicate into a pdf. The original paper scanner was crooked so if I just added that it’ll be very obvious that it’s the exact same scanned just edited

Metadata would tattle on you.
Pro's could see photoshop edits from a mile away.
Word of advice, be sure to use the original computer and program. Then set the clock to the original day (or a few days before that way it's an "early draft") if you really want your copy to be untraceable.

You can use rotate ya know. Also be sure to print then scan the text with the same brand of printer for the right artifacts. Otherwise the grain mesh of the paper wont match the new text.

The best tactic is to just edit then have the other party sign the addendum next time.

recreate the entire document digitally (not scan), make edits, print, and scan again. that way theres no metadata or noise patterns that would tattle.
maybe those yellow dots the printer overlays could reveal some info, but scanning in monochrome should bypass that.
