Body shots won't spill blood like a fountain or have big splashes like the movies, except if you hit junctions.
When it comes to handguns :
If the heart is hit it will bleed a lot but internaly.
Lungs are basicaly big bags of air, they won't bleed much, it's more difficult to spot the wound (entry and maybe exit) and treat it, the bullet might go trough the body in a unespected way.
Belly : same stuff more or less, if it bleeds heavily there's some serious trauma inside. If an organ is hit you might still be going on because of the adrenalin but it's going to be real bad real soon, you can't do much to save the guy until he's sent to a hospital asap.
If an artery is hit (extremities) and if the person isn't wearing heavy clothing, you'll see it right away. It's a funtain of blood.
Head : depends on the caliber, but will spill blood heavily only trough a small orifice or from the nose/mouth. It won't be an instant splash of gore like a shotgun.
