I actually wouldn't say bi or scorned lover, for Elizabeth lest we forget is also his cousin and his childhood friend, I agree that Victor cared for her, but as such appears to even dread the idea of marrying her
He desired to be a creator like Prometheus, he outright says he desires for them to show gratitude to him, and owe their being to him, to bless him as their creator. He desired to make something subservient to him
The reason I see it as clear, is because of the quite obvious masturbatory allegory of the creation of the monster, basically the entire of chapter 3 is a build up, in a dark room only lit by moonlight, he does something he describes as secret, loathsome, yet something he just can't stop doing, he describes it as euphoric and pleasurable, word for word saying he's forgetting about nature and what's natural, only for the deed he does to give birth to a new life, even goes so far as saying "it breathed hard" and making a "convulsing motion" right when it is created
The creature is Victor's desire made manifest, the desire he had for months. A desire he longed for in secret. Knowing that his desire won't be accepted, that society will deems it hideous. And that this abnormal desire of his is now very real, he rejects it and flees from his own desires, despite describing it as divinely beautiful the paragraph before, with nightmares of him scared that he might lose those he holds dear. It even gets to the point at the very end, that his desires get in the way of the marriage, by saying "… remember, I shall be with you on your wedding-night", and on the wedding night it kills the relationship between Elizabeth and Victor by killing Elizabeth herself
He also can't make the bride, for if he does, the creature goes away, and he can't let go of his desires, even knowing it will destroy him
