Every animal can eat some plants. Noah knew which, now the knowledge is probably lost.

Where does it say they only had 3 months?

They brought extra animals as a food source. It says so in the Genesis account (Genesis 6:21).

According to the Genesis account their genetics were better back then, resulting in the human lifespan being much longer.

As far as I'm aware they were long extinct by that point.
