The Turks were an imperial empire, not a colonial one, hence they could not afford to genocide the populations they conquered lest they fall behind in terms of industry/military might. Their main stranglehold over Europe was that they gated entrance to Asia and the commerce that it held, which is what motivated Colombus' expedition in the first place.
