In the Jewish religion, Jews are supposed to follow commandments given to them by god, not just the 10 commandments but the rest as well. They are collectively referred to as "the law". In the past, this was literally the law of the land at points.
Since it is treated as law, ancient Jews understood that no law code can anticipate every possible contingency without interpretation, and thus the Talmud was created. Basically, it's a book where different "lawyers" argue for different fringe cases and what to do with them under the law. For example, virgins have a different status to non-virgins, and so one lawyer asks "what if a virgin was raped, does she still count?" and they go back and forth quoting scripture and using logic until they reach a conclusion. (The conclusion here is that rape doesn't count by the way, but this is usually taken out of context as "a man raping a woman did nothing" where as what they mean is "did nothing to harm her status as a virgin".
Since it's framed as a back and forth between different points of view, you will often get a point of view that's pretty hainous that's argued for, and then subsequently debunked. This gives anti-Semites a lot of ammo, since they can selectively quote the people they don't agree with, even if they themselves in the book don't believe that stuff and are just playing devil's advocate to argue their actual point.
There are also commentaries and commentaries on said commentaries, if you look up what a typical page looks like you'll see.
