Given Greek, Roman, and eygptian paganism are the only well preserved in literature kinds, how the heck do any other neopagans justify their beliefs?

We also have the Rig Veda.
When you use comparative mythology to analyse the the Christian recording of the Norse and Celtic mythos they still contain relatively faithful stories even after thousands of years of oral tradition.
That said, neopaganism is made up bollocks.

Norse, Germanic, Celtic, Roman, Greek and Hindu religions are all based on the same set of Proto Indo European religious beliefs.

"Neopaganism religion" as in, the teachings themselves rather than "neopagans", the practitioners, is pretty much just syncretic made up nonsense.
This is especially true as I'm fairly certain most neopagans today follow some neopaganistic religion such as Wicca, which if you only bothered to look up its history you'd realize it's essentially another British fantasy like Lord of the Rings.

Truth is self-evident and self-justifying, without effort or rationale. Justification is necessary only in the need to convince yourself of something. When the grace of the ancestors gently washes your scalp, there is no possibility of doubt, thus no justification is necessary.
If you had any connection to the divine at all, you wouldn't rely on oracles to glean ethereal insight.
