The Roman Empire died in 363 AD when emperor Julian failed to stop the Christianization of the Roman Empire. In fact, Christianity allowed brainrot like iconoclasm and arianism/mono-/miaphysitism disputes instead on focus on state-building, which would eventually lead to the collapse of Rome.

Well technically Elagabalus (reigned 218–222 AD) was known for his controversial religious practices, particularly his devotion to the Syrian sun god Elagabal (also called Sol Invictus). SO the empire ceased to be Roman in 218 AD. Not sure what call the state that ran from 218 to363 AD but it isn't the roman empire by your standards

Yeah the baker’s dozen worth of civil wars, regional revolts, volcanic eruptions, and economic crises of pagan Rome were definitely worse than whatever you think happened in the Christian era. The onslaught of the Justinian plague is the only thing that stands out next to the rest of Roman history. Maybe the Byzantine-Sasanid war in the early 7th century, but even then Rome had weathered far worse.
