How come during the Crusades the Muslim opposition to European conquest was so incredibly fierce they eventually drove them out, but then during the late 1800s and early 1900s Europe was able to colonize North Africa and then the Ottomans Arab land so easily and with such little serious resistance?

They were organized muslim states that were at parity with Euro states. By the 19th century the RotW was a shithole.
