Because in reality they were the fallen watchers. They taught humans war, magic, potions, etc. And eventually bred with humans to create Nephilim (Demigods).

Cronus is portrayed as evil because he was part of the old pantheon that was replaced by Zeus and the Homeric gods. It's not that different from why Christians would portray Zeus as evil

They're assholes to humans because humans are inferior beings to them, like animals are to us. And Zeus is an asshole to the other gods because he's on a level above them. But the gods who are equal in status to each other are mostly nice to each other since they have nothing to worry about.

They symbolize the unhinged and sometimes brutal workings of the human mind.

Zeus is the mind the conscious ego and Hera the soul. Zeus constantly desires new women or material desires and soul resists and torments Zeus and attacks the material desires(the soul making things unsatisfactory or difficult to obtain)
