the torah, the prophets, the psalms, the gospels, the epistles, and the revelation.

They all existed separately. Most Jews could recount the entire Torah (the first 5 books of the Bible, written by Moses) orally. Rabbis and leaders would read from the Prophet scrolls and sing psalms during Passover.
Then Jesus came
Then the gospels would be distributed separately. Early churches, like the one in Corinth, would misinterpret the Gospels and start practicing heresy and the early Christians, like Paul, would send epistles telling them to cut that shit out.
Then John wrote his revelation.

Again, most of these holy scriptures stayed separated until Pope Damasus I who overlooked the Council of Rome in 382, which set about determining canon. He then commissioned St Jerome to translate it all, and compile it into the first full Bible, the Latin Vulgate.

I'm sure most Jews could remember the general narrative structure and major plotlines to a very impressive extent

I'm just saying they could not 'recount the entire Torah' as if they could remember word for word the entire thing
