How do we even know the bible is true?
Did Jesus ever come out and say this exact collection of scriptures is the word of God?

Jesus didn't leave us a Bible, he left us a church.

But basically the OT canon is pretty well agreed on with the Septuagint. We also have the books that Jesus and the Apostles cited. The New Testament is basically a compilation of what the church fathers recited during liturgy. "Apocryphal" works are religious texts you read at home and not during church services.

They couldn't get Jesus at the time. Only later they could figure out Jesus. That's why they thought Jesus told them to do something 100% contrary to his teachings.

The Prophets talk of God as if he had human imperfections in the Old Testament, so, that God in the Old Testament is OBVIOUSLY a projection they made. God is Love. Any doubt about that?

If you have the holy spirit you will recognize the voice of the shepherd in all 66 books of the King James Bible and see the Apocrypha, Book of Enoch, Gospel of Thomas etc. as the frauds that they are. If you are not saved, you do not have a good method to determine these things.

He left us rather 50k churches: Catholics, Nestorian, Manichaean, Marcionite, Anglican, Presbyterian, all the national Orthodox churches, Maronite, St. Thomas's Indians, etc.

We don't. The point of religion is faith over reason. The only real reason people are Christian over say, just plain Deist for example, is either a purely personal choice or because they were born into it.

Ultimately you have to accept that the modern understanding of the Bible is a complete kludge, a dog's breakfast of misunderstandings, mistranslations, arbitrary redactions and inclusions, and inserted commentary that has been filtered through folklore.
It does not pass any requirement of academic or scholarly rigor. Clearly multiple people writing multiple things for multiple reasons.
So you either think that God has deliberately wizarded your own preferred interpretation of this literature into your head, making it inarguable divine interpretation, or you let go and admit that it's an imperfect book for imperfect people to use to commune with an unseen deity, but that your faith makes up the difference.
Of course, you also have to admit that you don't have a definitively legal leg to stand on when it comes to beefing with other people about these beliefs

I'm not sure, for example, look at a genuinely intelligent and wide-read Christian who even mastered Greek grammar, ancient dead styles, and the most intelligent pagan writers, yet he still wrote Apocrypha, he essentially lied and with this deceived other Christians who relied on his works, in part because of his purported authority even if the writings are marked by genius nonetheless. I'm speaking about the Dionysian corpus.
