Mestizo isn't really a real race, it was invented by the Mexican government to try to eliminate racial conflicts. People who are 100% white and people who are 100% native will both be classified as mestizo arbitrarily.

Mestizos already existed when the spaniard conquistadors mixed with the native americans, an example of this is the son of cortés called Martin el mestizo.
Also, by 1790 it was the second largest ethnic group in New Spain with 25% of the population being mestizos only surpassed by the indigenous people at 60%
