Why were medieval knights such cucks? Why did they pledge to protect a "muse" who was more often than not already married to another man, and served by several other knights? And write poems for her and everything?

Being a knight carried several priviledges that the average peasant didn't have. For example, you were rewarded a title and coat of arms. Your coat of arms was basically your brand and carried legal protections and value which you can apply to things like Cutlery made under your supervision to raise its value and also allowed you to be more easily identified on the battlefield or in knight tournaments
