The vast majority of scholarship is in Chinese and Japanese.
The historical texts are primarily Classical Chinese (which you need to learn separately) and of those written in commoner language, the winner is once again Mandarin as it's the biggest, required by all administrators since Song and includes ares around the capital.

Cantonese, like Mandarin, is a modern commoner languages, just one that was contained to the Canton area.
