chopsticks are ergonomic too once you get good with them. they require dexterity . probably a good cognitive/dexterity training tool for kids.

This question could be extended to the Africa, India, and the Middle East because all of them generally eat with their hands and sometimes sit on the floor when they eat. The real question is when did cutlery, tableware, and chairs become common for Europeans outside of the elites.
