Why do people shit on Fujimoto and Isayama art so much when underground 2000s seinen manga looked like this?

You really think those same people ever read underground 2000s seinen? Both Fujimoto and Isayama are hyper mainstream shonen.

He's one of the best for sure when it comes to the sheer techniques of manga making for sure, but there is absolutely nothing special about Togashi's artwork. I wouldn't call him a bad artist, no, but there are so many other mangaka that are more impressive when it comes to technical skill, that he's not someone I would show a person if I wanted to show good examples of artists in the medium.

Kubo, Kishimoto, Oda, Murata, Miura, Obata, Kazuki Takahashi, hell, even some recent artists like Yukinobu Tatsu, all have Togashi beat in terms of good artwork. It's also weird how HxH fans need to come into threads to prove to everyone that his art is amazing, like they need to prove it to themselves.

I'll will argue that current Fujimoto's art is worse than that. At least the characters in Elfen Lied don't look out of place or clash with the backgrounds.
