As long as the values read you can basically choose any color. Then you can stylize and make those colors appealing without losing your shapes. But it starts with the values.

shapes -> values -> temperature -> hue
you can get progressively more sloppy with each step and it'll come off as artsy and spontaneous.

total accuracy is impossible because pigments can only capture a fraction of actual colors you see so you have to compromise. color relationships in the end are more important than total accuracy, if your colors are off but your relationships are right then it'll look good
