Struttura uomo in Movimento is your best bet. The entire book is about the range of motion of body parts. It goes into incredible detail on what moves, how it moves, what helps move it, why it moves, etc.

There's a couple downsides in it being super technical, the realistic style that people who want to draw only anime may not like, and the only high quality scan (that I'm aware of) is in Chinese. Thankfully, the drawings are detailed enough for you to understand them without reading and the text is highlight-able so you can translate it to English easily if you really need to.
