Somewhat accurate, though the lamb stuff is more of a regionalism most common to the west coast. Also, cod, pollock, herring and possibly even mackerel would be more popular than salmon in "traditional" Norwegian cuisine. Also lots of shellfish of course.

rice is just newer filling option to it. Rice used to be sort of fancy barley, barley grows here but rice doesnt so you had to have money to buy rice so rice was a special thing. That is why in christmas people eat rice porridge instead of barley porridge.

You can fill it with potatoes, barley...etc..

In the case of tomatoes and peppers they've been cooked in innovative ways along with other ingredients that native American never had which is why Mediterranean cuisine is unique.

rice, some varities of wheat, soy, bananas, citruses, lemons etc. dont grow here but you can grow cucumbers, tomatoes, cabbage, potatoes, wheat, barley, oat, carrots....

oh yeah sweet potatoes dont grow here either. The problem usually is that Finnish summer is too short, its not a heat problem, its just too short so things that grow for a long time typically dont do well

Afaik we have similar cuisine in terms of love to salted fish, pickled vegetables and rye bread and these things are actually pretty good and very tasty, you should try it. Btw, salted salmon is probably the best thing ever, even if you just eat it with bread

We have so many things made from rye its not even funny
Our bread is possibly the best in the world, im serious. Also rye bread (of course)
Karelian pastries are a staple but one could also mention korvapuusti, which in nature is similar to scones, eaten while drinking coffee
