Mexican cuisine is ONLY popular because of it's proximity to the US and the US popularizes literally anything it touches. Almost nobody in Europe, China, or Korea etc. could name a single Central American, Colombian, or other Latinx dish but they all know tacos. You are simply irrelevant in comparison to the United Statesian influence, if Jamaica was on the southern border of the US the entire world would be eating Jerk chicken and nobody would know Mexican Statesian cuisine.
