Honestly, I'd care about it if the bull actually had the chance to win.
And I mean really win. Get to live the rest of his life impregnating cows and being pampered.

But what happens to a bull when it wins (gores some spaniard to serious injury/death) the result for the bull is the same, only that it gets killed off stage. It gets killed because the animal is now deemed "too agressive" or "too smart to learn how to win and is too dangerous", so breeding this animal is no longer desirable. So spaniards go there to see the bull die, the bull is scripted to die, it's bred to merely put up a spectacle, and if the bull wins and btfo the spaniard it will still get killed.

So it is scripted animal torture scene, because bulls that just sit there and do not fight will also be killed off stage because they are not good for the show.
The is merely torturing the bull, because the other two options (bull doing nothing / bull winning) is not what spaniards came to see, not what they want, and now what the bull was bred and trained to do.
