I was once on a multi day bike tour with some class mates and when it came to buying food for dinner, one of the others suggested pasta with apple sauce, citing that it was supposedly a Swiss delicacy. I was convinced that he was trying to pull our leg, but thought it was funny, so I played along. We ended up eating pasta with apple sauce and a water melon and it tasted horrible.
Only years later, I found out that he had actually been serious. I still feel betrayed.

Not all Swiss! I eat my pasta with onions and sour cream and potatoes like a normal human being.

But in all seriousness, a lot of Swiss food is just lousy. We’re great at cheese, but we’re only a handful of generations removed from mountain peasant malnutrition. We didn’t have the surplus resources to fritter away on developing a gourmet sense until about 1900.

Pasta predates potatoes in Europe by a couple of centuries, although people had some other root vegetables. People ate bread, other grains and grain products, and pulses long before either of the above.

Unless he was asking what Swiss people ate before pasta, in which case it was mostly bread, dairy products, and miscellaneous animals. Lots of delicious ibexes and marmots. And at one point in history we ate all of our native beavers. They’ve been driven to extinction at least twice here, and only fairly recently reintroduced.
