Why do all these countries end with "stan" if that's a Persian thing and Tajikistan is the only actual Persian country here?

Because they were influenced by Persia. They all celebrated the Persian New Year for example. Also, all their intellectual elite like Al-Farabi spoke Persian back in the day.

persia was lingua franca of east. elites of east always spoke persian.
