Virtually all "Israelis" I know personally are actually Russians who acquired their citizenship as adults. They don't speak Hebrew and many of them never even lived in Israel. After staying there for a short while to do the paperwork, they either moved back to Russia or to a third country. There are probably tens of thousands of Israeli citizens like this (not only Russians, of course).

a family of israeli tourists gave me a ride home, after they saw me crash (and wreck) my bicycle. I had fractured ribs. I was grateful that I didn't have to wait for my dad to come pick me up.

They were very blunt and unfriendly. The wife didn't say much to me at all. The son who was on his ipad the whole time. It felt like talking to a girl who thinks that she is too hot for you. She just answers all of your questions in single sentences; never asking you anything. I got the sense that they didn't actually want to help me, but felt morally obligated, and really didn't enjoy it. Like they were unlucky to have seen me crash, and wish someone else had stopped for me instead.

I compare it to a different experience, where I was given a ride by Mormons. They were saccharine sweet. If anything they were too interested in me. It's like they wanted to be my friend, and have me over to dinner or something. They acted like I was the one doing them a favor by letting them help me. It was kind of uncomfortable. I think i prefer the unfriendly Israelis.

They were intentionally drawn that way so Israel would have a port on the Red sea. I can take the rest of the country being mixed prior to independence but aint no way that town was Jewish it's too far from the core lands

It depends on what kind of tourists you got
They can come from any background or raised by different manners, some are less talkative more serious, some are very loud and outgoing and some are very blunt. or very kind
It depends.
I always kept manners and responded blunt but nice.

Met him at the park. We exchanged a few words in Hebrew. He wants to learn how to code apparently so I guess I'll do a workshop with him to see if it's right for him.

I'm grateful to them. I don't mean to complain, just to explain what the interaction was like. It was interesting that their disposition was unsociable and cold, while their actions were objectively kind. I wouldn't call it tsundere, but it's that same sort of ironic juxtaposition.

they were pale skinned, and not wearing any noticeable religious garments.

I don't think that you can lump American Jews together with Israelis. Most of the American jews I've met have been indistinguishable from secular White Americans of a Christian background. The ones I've met, who seemed more Jewish, were charismatic in stereotypically jewy ways; like Dr. Katz, or a Stanley Tucci character. I miss my ex gf's funny dad more than i miss her.

I assume that was true for the wife and son. The husband was completely fluent in English. He may have just been tired. I'm still grateful to them.
