There's a theory that the Plague (which mostly avoided eastern Europe) caused major labour shortages which made peasants more valuable, liberated them from serfdom and contributed to socio-economic reforms in northwestern Europe that didn't take place in the east

This theory is rather weird since even after plague, western Europe was still more densely populated than eastern Europe + in eastern Europe serfdom was gradually getting more and more harsh all the way until 18th century when it reached the peak, 500 years after the plague, so it really couldn't have any special impact anymore.

not to mention, that serfdom in eastern Europe was so harsh BECAUSE of constant lack of workforce, not because of overpopulation or something. This is why nobles didn't want to let their peasants migrate to the cities (there were heavy restrictions), because they were always short of workforce on their farms.
