As anon said, the German people were kept insulated from the bad news on the Western front in 1918 so they assumed they must have won the war and that Jews or something undermined them. In truth the German army in France was rapidly collapsing and the Entente were heading for the German border fast. The generals were panicking and begged the civilian government to throw in the towel.

^This. The German army was crushed by the Hundred Days' Offensive. The Entente were already racing towards German border. War was lost, German general staff knew this. That's why they begged the civilian politicians to call for truce before everything is lost.

There was no stab in the back. Germany simply lost. The entry of the US into the war sealed their fate because all that extra manpower broke the stalemate in France.

Hitler had the notion that Germany's existing farmland couldn't feed 70 million people so they needed to colonize new land in Eastern Europe. The thing is that despite its industrial and tech prowess, Germany was lagging in other areas especially agriculture and food processing were still largely in the 19th century.
