if it was the GOAT food, it wouldn't be so full of carbs and the only meat dish that's remotely not full of carbs is probably the bistecca fiorentina which i've had once and it was literally drenched in olive oil and it was just a mid steak.
mexican food is one of the GOATs because the meat is always extremely juicy (birria, al pastor) while Italians only know how to cure meat 99% of the time or cook it in pasta.
mexicans also have really great fresh flavors with their wide variety of delicious salsas and can be healthy as fuck if you don't drink a 2L of coke like most mexifats.
italians can't cook meat at all and you'll never be the GOAT cuisine if you ruin meat like italians do. meat needs to be seared (maillard reaction), braised (i.e. birria tacos), or treated in some way to maximize juiciness. italians usually just cure the meat and it comes off as greasy at best or just mid like prosciutto. i even watched them fuck up a steak by not putting salt or pepper on it.
not to mention, italians only have one or two flavor profiles mostly consisting of salted pork, tomatoes, eggs, and cheese
and 90% of it is just carbs, like shit for pajeets.
