To my knowledge Anatolia did not have many Jews (maybe Smyrna had some idk). The main diasporas were in Thessaloniki and the Levant. Muslims were relatively tolerant to Christians and Jews. You just had to pay the Jizya tax. It’s the pagans (including Hindus) who were treated like scum of the earth.
