There is Severo Ochoa who won a nobel prize in the 1950's for his discovery of a method to synthesize RNA and Santiago Ramon y Cajal who founded modern neuroscience. For mathematics there is one that is a bit nicher but very popular with contemporary mathematicians. It was a woman who worked in Group Theory, but I don't recall her name

Actually I remember one : Dunford, like in the Dunford Decomposition (Linear Algebra). I actually thought the Jordan Decomposition was English too because the dumb bitch pronounced 'Jordan' the English way (it's a French name too but rarer in France), turns out Camille Jordan was actually a Frenchman.

You're right about the frequency of Russian names being higher though. In my original message I was thinking more of school textbooks while the focus shifted to more advanced textbooks.
Yet I will tell it to you again : don't pretend you know anything about math and topology in particular otherwise you wouldn't have named Poincaré when I named Lebesgue earlier. You would know what Lebesgue and Borel Sigma-Algebras are. And in fact you would know Analysis and Topology are connected through results you can thank these two mathematicians for, both French.
