the only issue i see is that they keep calling it cacio e pepe. it's just wrong to use a name that implies certain ingredients, and then change the ingredients.

adding cream is something lazy unskilled cooks do to stop the cheese from clumping, but it results in a heavier and less cheesy dish so is obviously inferior and if you can make it without cream you should

It's true, Macaroni Cheese was invented by the Tudors I believe.
Still I think Cacio e Pepe is a better dish, the lack of roux makes it lighter and cheesier, and also simpler to make.
It's possible they also invented lasagne, as the earlies written recipes in English and Italian date from roughly the same time.
