IIRC pastor was made by lebanese christian immigrants who used what they could get to try to make something similar to schwarma, and since there were no subhuman muzzdogs where they immigrated to they could use port.

Basically a pot or pan with a vertical metal skewer that can be removed for cleaning after you make the food. We stack sliced pork shoulder and pineapple rings on it after we finish marinating the meat.

In the USA:

Gyros and kebab are made with lamb+beef most of the time because of institutional inertia by big meat packers.

Schwarma is usually made out of straight beef or straight chicken, also due to our meat packing industry.

Al Pastor is usually made with just pork meat. It and kebab are the only two that get the right meat due to our meat packing industrial complex.

Depends on where you are from. Also it depends on how wealthy you are. Here in the USA we have very strict controls on pork, which is substantially cheaper than beef, which is much cheaper than lamb. No one in the USA has gotten trichinosis from pork since the 1970s. It's all been from game meat (usually bear) since then. And pork is not any worse for you than beef.
