I've had food in Morocco and it was shit apart from the bread, my mum was raving about how great the tagines would be and they were rubbish.

These are pretty much the plainest cheapest foods we have, I dunno why tourist rave over them.
Try Pastilla, that shit requires a fucking engineer of a woman to make, and it tastes God-tier, yet it is obscure.

I thought Phyllo dough is more of an eastern thing, though I know some Greek dishes that use it. We already make like 90% of all French pastries. Besides mille-feuille, which isn't phyllo dough, I dunno any pastry using it.
