Ghee is also known as "clarified butter", which is basically done by melting butter in the pan until all the water evaporates and you remove all the milk solids from it. That makes the butter shelf stable and you can leave it at room temperature, which is why its an Indian thing, because it was developed before electricity and in a place where it's hot as fuck.
It does have a strong smell and flavor tho
