I think of Klondike Bars, as Iโve always heard them called, as just a rectangular slab of vanilla ice cream coated in chocolate, no sandwich/wafer/biscuit element involved. Perhaps they did or do also make an ice cream sandwich version, but Iโve never noticed it. I assume they still exist.
Iโve seen variations on the ice cream sandwich all over Europe, where I lived for half my life, including the basic/classic format in OPโs picture. My children liked the Oreo version when we lived in Switzerland.
In my current home base of California thereโs a popular local version called the Itโs-It, which is an ice cream sandwich made with oatmeal cookies and coated in chocolate. Theyโre pretty good but Iโve always found the chocolate coating an unnecessary messy addition that adds little value to the flavor.
