Misleading titles.
The left map is not self-identification, but an estimate by a demographer from the 20th century. Self-ID statistics today are different.
The right map is not "verified white", it's percentage of the population over a certain threshold of Caucasian admixture from certain genetic studies, which is a decent approximation but not exactly the same as white, since black and amerindian admixture affect the phenotype differently, and Caucasian includes Spaniards, Germans, and even Lebanese people, who are phenotypically not the same. A country where many whites are of Arab descent mixed with amerindians will be less white than a country with whites of German descent mixed with amerindians.
Also, Andalusians were not mostly converted Moors. Andalucia was repopulated by northern Spaniards. Even today, the genetic distance between Andalucians and Catalans is relatively small, 2x smaller than between north and south Frenchmen and 4x smaller than between north and south Italians.

The line between white and non-white has always been blurry, especially in the new world with castizos, middle easterners who look a bit lighter or southern europeans who look darker. In an Anglo context though, white is just Germanic/Nordic NW European, generously extended to other Europeans in some contexts.

You're onto something. An individual who is black or brown can be aryan in temperament, but these are exceptional cases and most of them are not like that. Every single Arab is obviously not an animal, but finding an Arab who is better behaved than the best behaved of Dutchmen will be a challenge. Group hierarchy is real but individual differences exist too.
