Based on my experiences working in various restaurants, even eating rare beef isn't always quite as common as you'd think unless it's something like an expensive steak. But yes, it's much more common than eating raw fish so the point still stands. The easiest way that I can get other Americans who aren't used to raw fish to eat it is by bring them to some Asian fusion restaurant as a gateway and it usually turns out okay. Still though I've met a few people who absolutely refused to eat any raw fish.

It's more common nowadays yes. Keep in mind though that something like pic related is what a lot of people may think of as sushi and not sushi in the traditional sense.
