The sausages most bbq joints serve are descended from Czech or Polish sausages, though sometimes you can find German beef sausages. The spices may be slightly different. Sometimes you can also get venison sausage which I really like, or jalapeno sausages.
Louisiana also has it's own types of sausages and sometimes you see that made in Texas too.

I once ate a good quality german wurst in some fancy hipster foodtruck and it absolutely mogged any pooplish sausage I have ever eaten in my life.
And on a daily basis I prefer Spanish fuet or chorizo over any central or eastern euro sausages, they're all dried and full of flavour while here it's always just smoked and fat, almost never dried.
