countryside can be quite nice, the sauerland region is mountainous and has lots of small towns and villages that are perfect if you like to go hiking, forests or nature in general.
but the metropoles are icky since there's always a disproportionately high chance of getting stabbed by a shitskin immigrant.
especially inner cities are a hot spot for criminal shitskin activity.
so avoid the ruhrgebiet at all costs.
depending on your trade metropoles obviously are easier to find a job in, which can be more complicated when living in a ~10.000 pop town and the surroundings villages

A few questions to ask yourself:
1. Is he a world expert or did he convince you that he was a world expert?
2. Is he a junior PI or quite senior?
3. Is the "super niche field" solid, or some new-age "AI for X" crap that is actually a tower of cards?

Make sure you don't get burned because you don't want to travel half way across the world to find yourself in a shitty PhD with bad job/academic prospects.

In most German PhDs there is no graduate school so if you don't like the PI, you're fucked. Your choice is to suffer or quit.

It's pretty great. Unless of course you're a tourist that only goes into the city centres of the biggest cities, there you'll feel as if you were in Baghdad or Kabul.
If you visit, stay well clear off the trodden path, visit small villages, go hiking in the forests, go biking on the trails of the Münsterland, go canoeing on the Ruhr or the lakes, visit the Extern Stones, the Teutoburger Forest, the Eifel, the Sauerland.
