i made an authentic carbonara with eggs, guanciale and pecorino recently. spent double for guanciale compared to pancetta.
it was a bit worse than when i made it with eggs, pancetta and pecorino. or eggs, pancetta and parmigiano regiano. the best was when i added a bit of butter to the pork fat to give it that delicious butter aroma
