Easy? Depends. Well, easier than dealing with human traffickers. Probably "cheaper" too. You just have to deal with Spanish bureaucracy, which is a hassle, but not as bad as being harassed by gangs and ICE.
There's plenty of attorneys helping people from LatAm who come here as tourists become citizens of Spain, I haven't heard of any deportation cases or enforcing the immigrations laws. The Spanish government, regardless of who's in charge, favors immigration from LatAm. The same can be said for companies who want cheap labor.
I'm not an expert on the matter though, but there's plenty of people on the internet talking about how they got their citizenship after two years. Again I'm not an expert but I'm pretty sure you could even get citizenship without even setting foot in Spain if you can prove you have Spanish ancestry, just turning in whatever family records you have regarding that ancestor. If you have a granpa or grandma who was exiled after the Spanish Civil War you'll probably get it.
