Improved by Americans replacing maize tortillas with harina tortillas. Maize's strong flavor often masks the more subtle flavors of the other parts of the dish, while harina's neutral flavor lets the rest of the dish shine through.

I love it, but I don't think it is quite as diverse as a lot of people say ; the sauces are generally acidic and they eat loads of tortillas and other corn based staples

Pro: Very easy to like, hard to hate. Nothing too weird. Simple, tasty and filling.

Cons: dishes are usually variations of the same ingredients/things, low skill ceiling and space for complex flavors. Makes you fat

The tortilla is not a fundamental part of the dish, they serve them aside like you guys do with the bread and butter in order to fill people faster and ration food. You know you are dealing with a poorfag when he asks for/brings his own tortillas for a dish that doesn't include them. Even now:
