Well it depends, there are reservations for dalits in government jobs and universities, but most dalits are so poor that they are forced to leave education early in life to support their parents.
Yes, you can hide your caste by changing your surname(use generic surnames like kumar,or choose any other surnames which is used by baniyas, kshatriyas). however, your friends, colleagues may find out about your caste if you use caste certificate to claim reservation in universities or for a job.

Well there aren't just 5 castes, that's just for the sake of brevity, there are thousands of sub-castes that discriminate amongst themselves, as well as those down the ladder.
The absolute bottom, the untouchable, are taught their suffering is karma for their past lives.
In medieval europe, the peasantry didn't always rebel against the nobility. A farmer could group up all farmers to take down, let's say the merchants, but he wouldn't get supported by the baker who loves the system because he's above some fools.
