Ivan is a variation of John.
In West Slavic countries variations of Jan, Janus, Janusz are more common. In Slovenia it's Janez and even Jan before Ivan. In Croatia Ivan is the most popular but Jan is also very popular. In Serbia Jovan is the default form but Ivan is also common.

It should be Nicolas. Nicolas is way more common than Pierre. Nicolas is what John used to be in the US a few years ago (everybody named john smith or whatever).

It's not really a double s, it's a sharp s like z in English. A problem with German orthography is that there is no coherent way to distinguish between short and long vowels, and double s is the same z sound, but usually denotes that the vowel before is short, whereas ß is z but the vowel is long.
