It's not merely Spanish, they brought ingredients from other parts of the world that were integrated to Mexican cuisine, and it's the same for any cuisine.

The thread is about Spanish/Med (and I added Euro myself) countries. While rice is Asiatic in origin it has also been consumed in Spain for millenia - Ancient Egyptians and Greeks already farmed it.
