Generic things like summer festivals or springtime fertility prayers or harvest feasts aren't European Paganism, those are global and are just a product of how agricultural economies work.
Paganism in the West and Central Europe at least (perhaps there was more durability in Eastern Europe) was totally paved over by Christianity and the theology and ritual was lost.

Yeah that's why I said especially Western Europe. In Eastern and Northern Europe you still had paganism for a lot longer. But folklore informed by paganism isn't the same thing as the religion continuing uninterrupted, it's just remnants of the culture not the full religion in itself. This is why the Slav and Baltic neopagans are at least a little more accurate even if a lot of it is dubious reconstruction.
