Air-to-air combat, ground attack, etc. The stuff they've been used for since the 80's + now greater focus on network-centric combat and interoperability with other assets in different domains (combined arms)

the base models of the Gripen and most Russian planes are decades old, but there are new versions, like the Gripen E or Su-35S
depending on what kind of support they have (AEW&C aircraft for example) and what kind of missiles they carry (long range beyond visual range) they can both destroy each other

the F-35 for example can also be adapted to the user's needs, see the F-35I. the US just won't let anyone except Israel do that.

like what? different weapons or external fuel tanks? or different radars or avionics? you can do all that with the F-35 too, the British ones will integrate the MBDA Meteor for example, Israeli ones have their own avionics, you can mount external fuel tanks too (those reduce stealth ofc).
the Gripen is just older and less advanced. it's still a good fighter, just not as good as the F-35.

Gripen is manufactured in both Sweden and Brazil these days. Upped production has been in the work for our own fleet for a couple of years already. It's not a supply line that need much upgrades anymore. Countries like Hungary and Thailand are already seeing their own shipments being made as we speak

Russian jets are absolutely flying. What they aren't doing is flying over contested Ukrainian territory, instead the Russians stick to their own air space and launch missiles at the Ukrainians.
The Russians don't have air dominance like America did in Iraq or Afghanistan but that doesn't mean that aircraft are suddenly useless.
