I just realized I was already eating something like this. When I cook nilagang baka or Philippine style beef stew/soup, I would boil the potatoes separately from the stew/soup. The leftovers would last about two or three days, and when I ran out of the beef soup/stew, I just eat the leftover boil potatoes, mash it and add some soy sauce (my preferred condiment to nilagang baka). Mashed potatoes and rice goes surprisignly well, and many others from India have discovered this as well. Eating chili with potato and rice is new to me, as well as that oil, whatever it was, maybe ghee. It's pure carbs though. I'd add some fried fish or boiled eggs personally. Also instead of water in the rice, I'd use beef broth from a beef bouillon cube instead with the rice.
