I used to eat at both Indian & Pakistani restaurants on a semi-regular basis. The food was mostly the same, but one thing I've noticed is that Pakistanis do grilled meats & breads better, while Indians are better at sauce-based curries. My girlfriend is vegetarian, so nowadays when I fancy some South Asian slop, it's almost always Indian, as they tend to have better and more varied options when it comes to non-meat dishes.

Most of cultural influences traveled from west to east along northern india.
North Eastern cuisine is entirely different; they have myriad of dishes utilising pork, black rice and stews not found in other places.
Southern states have idli, sambar and dosa, alongside a healthy diet of chicken and beef. pakistan also has balochis, that are closer to afganis than northern india.
